Discover the bold and warming character of Shou Mei (Longevity Eyebrow) 白茶寿眉, a unique and flavorful white tea grown in the renowned Fujian province of China, particularly in the Fuding and Zhenghe regions. Cultivated in the mist-covered Taimu Mountains, this tea benefits from an ideal terroir, where the combination of mineral-rich soil, high altitude, and soft mountain mists creates a tea with depth, body, and an exquisite aged complexity.


Shou Mei is known for its larger, more mature leaves and fewer buds, making it the most full-bodied and robust white tea. It offers a rich infusion with notes of dried fruits, honey, and subtle woodsy undertones, developing a deeper, slightly malty profile as it ages. This tea is often aged for several years, enhancing its complexity and bringing out layers of sweetness and depth similar to aged pu-erh teas.

 


 

Brewing Methods


Classic Western-Style Brewing (Full Infusion)


Tea-to-Water Ratio: 3-5g per 250ml (8oz)

Water Temperature: 85-90°C (185-194°F)

Steeping Time: 4-6 minutes

Number of Infusions: 2-3

Gongfu-Style Brewing (Traditional Chinese Method)


Teaware: Gaiwan or small teapot (100-150ml)

Tea-to-Water Ratio: 5-6g per 100ml

Water Temperature: 90-95°C (194-203°F)

Steeping Time & Infusions:

1st infusion: 5-10 seconds

2nd infusion: 10-15 seconds

3rd+ infusions: Gradually increase steeping time
